Peanut Butter Chews
I remember freaking out when I first saw this recipe on Oh She Glows (in excitement!), then freaking out again when I realized I was out of nut butter 😦 But the stock was replenished and I am once again a happy camper!
These are great to throw together when you want a sweet treat but are feeling a little lazy or pressed for time. Beginning to end, the chews take under fifteen minutes to make (including photography and cleaning up, seriously!) and require minimal clean up – it’s a one bowl recipe.
I give all the credit for this recipe to Angela at Oh She Glows. I only (barely) changed the ingredients to suit what I had!
- 1/4 C crunchy natural peanut butter
- 1 t vanilla
- 1 C brown rice cereal
- 3 T maple syrup
- In a medium sized bowl, stir together peanut butter, maple syrup and vanilla.
- Microwave on high for 45 seconds*
- Stir in rice cereal.
- Wet hands well, then shape into discs and place onto a plate or tray lined with baking (parchment/non-stick) paper. Chill in the freezer for 5 minutes (you could clean up while you wait 🙂 ) Makes 8 chews.
